Our harvest begins in October and November with increasing excitement every year, and according to their ripening level, our olives are picked by hand or machine. In less than 4 hours, the gathered olives are then sent to squeezing in crates without contacting the soil. During this process, which is called cold-pressing, squeezing is done at an average temperature of 27°C. We subject the oil we obtain to natural filtration in chrome tanks, taking into account light, heat, and weather conditions. Our oils, which are obtained by organic production and natural extraction methods, reach you by preserving the highest polyphenol values.
